A major factor in dry sausage production is the uniformity of the finished product. Marel's fully automated processing lines accurately check that the desired fat content of the finished salami or pepperoni is not exceeded. Each and every batch is standardized by means of our FATscan analyzer, which measures the fat content of the meat immediately after it leaves the grinder. Online measurement renders time-consuming laboratory testing superfluous, while at the same time contributing to optimal production hygiene.
